Simple Sous Vide Steak

Ingredients

  • 1 steak
  • 1 Tbsp (15g) vegetable oil
  • 1 Tbsp (15g) kosher salt
  • 1 tsp (3g) fresh cracked black pepper

Directions

  1. Preheat sous vide to 54°C.
  2. In a small mixing bowl, whisk together kosher salt and black pepper until fully incorporated.
  3. On a wire rack-lined baking tray, season steak on all sides.
  4. In a vacuum sealed bag, add in seasoned steak. Seal the bag, and add to sous vide. Cook steak for 60 minutes.
  5. Remove steak from vacuum bag and pat dry.
  6. Preheat a cast iron pan over medium high heat, then add vegetable oil to the pan until it begins to smoke.
  7. Season steak with salt and pepper, then add to the pan and sear for 1-2 minutes on each side.
