Homemade Graham Crackers:
*can substitute with 2 cups (250g) crushed store-bought graham crackers
- ¾ cup (116g) all purpose flour
- 1.5 cups (211g) whole wheat flour
- ¼ cup (60g) light brown sugar
- ½ tsp (2g) fine sea salt
- 1 tsp (4g) baking powder
- 1.5 tsp (4g) ground cinnamon
- 1 large egg
- 3.5 Tbsp (50ml) whole milk, plus extra
- ¼ cup (80g) honey
- 3 Tbsp (42g) vegetable oil
Key Lime Pie Filling:
- 4 large egg yolks
- 1 Tbsp (4g) key lime zest, finely grated
- 14 oz (400g) sweetened condensed milk
- ½ cup (120ml) fresh key lime juice
Pie Assembly:
- ⅓ cup (70g) light brown sugar
- ¾ tsp (3g) teaspoon fine sea salt
- ¾ cup (168g) unsalted butter, melted and cooled
- Whipped cream, for garnish
- Freshly grated key lime zest, for garnish
