Ingredients

  • 2 ripe bananas, broken into pieces
  • 3 large eggs
  • ½ -⅔ cup (63g-83g) all-purpose flour
  • Pinch of salt
  • Butter, to serve (optional)
  • Maple syrup, to serve (optional)

Directions

  1. Add the bananas and eggs to a blender. Blend on high until smooth.
  2. Add the flour and salt then blend on low just until the flour is combined. If the batter seems too thick you can add a bit of water. If the batter is too runny, add a bit more flour. Let the batter rest for 2-3 minutes.
  3. Heat a large nonstick skillet or griddle over medium heat. 
  4. Scoop ⅓-cup of batter and pour into the hot skillet or onto the griddle to cook until set, about 3-4 minutes. Flip and finish cooking on the other side for another 2-3 minutes. 
  5. Transfer to a serving plate or platter.
  6. Serve as is or with butter and maple syrup.
