- Place the fat in a large sauté pan set over medium-low heat and cook until you have about 1-2 tablespoons of fat rendered out.
- Add the onion and increase the heat to medium-high and saute for 3-4 minutes until softened and just starting to brown.
- Add the shiro dashi and the water and increase the heat to medium-high and bring to a boil.
- Reduce the heat to medium-low and add in the thinly sliced steak, stirring to separate the pieces and cook through, about 2-3 minutes. Turn off the heat as soon as the steak is done.
- Taste for seasoning and add salt if needed. You can eat this as is or serve it as it’s meant to be, over rice and garnished with green onion.
