Cheap & Easy Hummus Mezze

Ingredients

Hummus: 

  • 2 cups (275g) canned garbanzo beans, drained and rinsed
  • ¼ cup (60ml) extra-virgin olive oil, optional
  • ½ cup (125g) tahini
  • Kosher salt, to taste
  • 1 lemon, juiced

Assembly:

  • Drizzle of extra-virgin olive oil
  • Flakey sea salt 
  • Paprika 
  • Pita bread, quartered
  • Sliced cucumber 
  • 1 large radish, quartered 
  • Sliced carrots 

Directions

Hummus: 

  1. Pour the garbanzo beans into a large mortar or molcajete and smash with the pestle to reach the desired texture.
  2. Add the olive oil, if using, the tahini, salt to taste, and lemon juice. Mash to a very smooth consistency and season with more salt to taste, if needed. 
  3. Spoon the hummus into a shallow serving bowl.

Assembly:

  1. Top the hummus with a generous glug of extra-virgin olive oil. 
  2. Season with paprika and flakey sea salt.
  3. Onto a serving plate, arrange the pita, cucumber, radish, and carrots for dipping.
