Ingredients

  • 15 large jalapeños, de-stemmed, halved, seeds and ribs removed
  • 1 lb (453g) creamy herbed goat cheese (recommended Boursin)
  • 2 lbs bacon (906g), cut in half

Directions

  1. Preheat the oven to 450°F (232°C).
  2. Stuff each jalapeño half with roughly 2 teaspoons of cheese. Wrap the stuffed pepper in a piece of bacon, twisting it up and around the jalapeño while trying to keep the bacon in a single layer. Trim any excess bacon if necessary.
  3. Place the wrapped jalapeños, stuffed side up, on a parchment lined sheet tray and bake for 20-25 minutes, or until the bacon is crispy and cooked through. Let them cool enough to handle, then serve and enjoy.
