Potato Buns:
- 3.25 cups (487g) all-purpose flour
- 1/4 cup (51g) potato flour
- 1.5 Tbsp (10g) dry milk powder
- 1/4 tsp (0.5g) amylase, (optional)
- 2 1/2 Tbsp (45g) granulated sugar
- 1.75 tsp (7g) fine sea salt
- 1.24 cups plus 2.5 Tbsp (300g) 90℉ / 32℃ water
- 2.5 tsp (10g) instant yeast
- 1 large egg
- 3.5 Tbsp (56g) unsalted butter, softened
- Cooking spray
- Egg wash (1 large egg whisked with 1 Tbsp of water)
- Melted unsalted butter, for brushing (optional)
Shack Sauce:
- 1 cup (220g) mayonnaise
- 1/3 cup (78g) ketchup
- 1/2 cup (125g) yellow mustard
- 1 Kosher dill pickle, finely diced
- 3 Tbsp yellow onion, very finely diced
- ½ tsp (0.5g) paprika
- Pinch cayenne powder
- 2 cloves garlic, grated
- Kosher salt, to taste
Burger:
- 1.5 lbs (680g) fatty ground beef (under 80% lean)
- Cooking spray
- Salt and pepper, to taste
- 5 slices American cheese
- 5 slices white cheddar
Assembly:
- 5 homemade potato buns
- 3-4 Tbsp unsalted butter
- Cooked burgers with cheese
