Cheap & East Spicy Chili Garlic Noodles

Ingredients

  • 1/3 cup (80ml) vegetable oil
  • 3 Tbsp (25g) chili flakes of choice (Sichuan, crushed red pepper flakes, gochugaru, etc.)
  • 4 garlic cloves, finely grated
  • ½ tsp (3g) granulated sugar
  • ½ tsp (3g) MSG, optional
  • 2 green onions, finely chopped, plus additional for garnish
  • 2.5 Tbsp (22g) soy sauce
  • 1 Tbsp (15g) distilled white vinegar
  • 2 tsp (10g) lightly ground white sesame seeds, optional
  • 1 package of preferred noodles, such as ramen, Chinese egg or wheat, knife-cut, etc.     *(do not recommend using pasta)

Directions

  1. Bring a large saucepan of water to a boil over medium-high heat. 
  2. In a small saucepan, heat the vegetable oil over medium heat to 350℉ (175℃).
  3. In a heat-resistant, large metal mixing bowl, whisk together the chili flakes, garlic, sugar, MSG, chopped green onions, soy sauce and vinegar. Carefully pour the hot oil into the spice mixture, lightly whisking (the spices will sputter and pop).
  4. Allow to sit for 5 minutes to slightly cool. 
  5. Cook your preferred noodles according to package instructions. Drain and return the noodles to the pot.
  6. Immediately pour the chili oil over the noodles and toss to evenly coat. 
  7. Transfer the chili garlic noodles to a bowl and top with sliced green onion.
