For activation:
- ¼ cup (56g) demerara, brown, or organic cane sugar
- ½ cup (118ml) hot water
- 3 cups (709ml) room temp filtered (ideally fluoride free) water
For every batch of water kefir:
- ¼ cup plus 2 Tbsp (78g) granulated sugar (same as before)
- 1 cup (237ml) hot water
- 5 cups (1.2 liters) room temp filtered water
