- 1 Tbsp (16g) kosher salt
- 1 Tbsp (16g) granulated sugar
- 1 tsp (6g) white pepper
- ¼ tsp (1g) Chinese five spice
Dredge:
- 1 cup (100g) sweet potato flour
- 2 quarts (950ml) vegetable oil for frying

- 1 Tbsp (12g) white pepper
- 2 tsp (8g) kosher salt
- ½ tsp (2g) Chinese five spice
- ⅛ tsp (>1g) curry powder
