- In a medium saucepan, melt the butter over medium heat. Add the flour and whisk to combine, to create a roux. Cook for 30 seconds to toast the flour.
- Slowly pour in the turkey stock, whisking to incorporate the stock into the roux until the stock begins to thicken into a gravy.
- Season with salt and pepper, to taste. Add the herbs, if using, and stir to incorporate.
