Ingredients

  • 1 steak
  • 1 Tbsp (15g) kosher salt
  • 1 tsp (3g) fresh cracked black pepper

Directions

  1. Preheat the smoker to 225°F (105°C).
  2. In a small mixing bowl, whisk together salt, and black pepper until fully incorporated.
  3. Place steak on a wire rack-lined baking tray and season with the spice mixture onto all sides of the steak.
  4. Place the steak on the smoker grates and smoke for about 45 minutes to 1 hour, or until it reaches an internal temperature of 125°F (50°C).
  5. Remove steak from the smoker and heat a cast iron pan over medium-high.
  6. Add vegetable oil to the pan, and allow it to begin smoking. Then add the steak to the pan and sear on high heat for 30-45 seconds on each side.
  7. Transfer steak to a cutting board, and allow to rest for 5-8 minutes.
