Ingredients

  • ½ cup (71g) hazelnuts, toasted and skinned
  • ⅔ cup (130g) granulated sugar
  • 3 Tbsp (45ml) water
  • 1 tsp (5ml) lemon juice
  • Kosher salt, to taste

Directions

  1. In a small dry skillet set over medium heat, toast the nuts until fragrant and lightly brown and the skin begins to break away from the nut, about 4-5 minutes.
  2. Remove the nuts from the pan onto a kitchen towel and roll the nuts in the towel to remove the skins. Set aside while you make the caramelized sugar.
  3. In a small sauce pot combine the sugar, water and lemon juice. Bring to a boil and cook until the sugar begins to turn slightly amber, about 7-9 minutes.
  4. To make the praline, place the hazelnuts onto a silicone mat, and once the sugar is caramelized, pour it over the nuts and allow the mixture to cool completely.
  5. Once cool, break the praline apart into large chunks and eat immediately.
