- In a small dry skillet set over medium heat, toast the nuts until fragrant and lightly brown and the skin begins to break away from the nut, about 4-5 minutes.
- Remove the nuts from the pan onto a kitchen towel and roll the nuts in the towel to remove the skins. Set aside while you make the caramelized sugar.
- In a small sauce pot combine the sugar, water and lemon juice. Bring to a boil and cook until the sugar begins to turn slightly amber, about 7-9 minutes.
- To make the praline, place the hazelnuts onto a silicone mat, and once the sugar is caramelized, pour it over the nuts and allow the mixture to cool completely.
- Once cool, break the praline apart into large chunks and eat immediately.
