- 2 Tbsp neutral-tasting oil
- 1 medium yellow onion, peeled and diced
- 2 jalapenos, stemmed and finely diced

Fancy:
- 2 Tbsp unsalted butter
- 2 shallots, peeled and finely diced
- 4 serrano chilies, seeded and sliced (leave seeds if you prefer spicy)

- Kosher salt and freshly ground black pepper to taste
- 2 Tbsp all purpose flour
- 1 cup whole milk
- 4.5 cups cheddar cheese, shredded
- 1 cup cave aged gruyere cheese, shredded
- ½ cup sour cream
- Avocado, diced, for garnish
- Flaky sea salt for finishing
- Pickled red onions, for garnish,
- Serrano chilis, thinly sliced, for garnish
- Cilantro leaves, for garnish
- Hot Sauce, for drizzling
