- 2 tsp (10g) mushroom soup base powder
- 2 tsp (6g) smoked paprika
- ½ tsp (1g) ground cumin
- 1 tsp (3g) garlic powder
- 1.5 tsp (7g) kosher salt
Fries:
- 2 lbs (900g) russet potatoes, peeled & cut into ½” (12mm) matchsticks
- Kosher salt, to taste
- 1 cup (150g) all-purpose flour
- 1.5 tsp (8g) fine sea salt
- ¼ tsp (1g) MSG (optional)
- 2 tsp (6g) smoked paprika
- 1/2 tsp (1g) onion powder
- 1/2 tsp (1g) ground cumin
- 1 tsp (3g) garlic powder
- ½ tsp (1g) cayenne powder
- ¾ cup (180ml) cold water
- 3.5 quarts (3.3L) vegetable oil
Nacho Dip:
- 2 Tbsp (28g) unsalted butter
- 2 Tbsp (15g) all-purpose flour
- 2 Tbsp (30g) heavy cream
- 1 cup (240ml) whole milk, plus more as needed
- 1 tsp (3g) freshly ground black pepper
- ½ tsp (1g) cumin
- ½ tsp (1g) cayenne powder
- Pinch of smoked paprika
- 4 oz (113g) of freshly grated American cheese
- 4 oz (113g) freshly grated cheddar cheese
- 2 oz (57g) freshly grated gruyère cheese
- Pinch Doritos powder

- 1 cup (200g) mayo
- 3 Tbsp (45g) Valentina hot sauce
- 1 tsp (3g) ancho powder
- 1 tsp (3g) garlic powder
- Kosher salt and freshly ground black pepper, to taste
