- 1/2 cup (15g) unsalted butter, very cold
- 1 cup (80g) shredded sharp cheddar cheese
- 1 cup (240ml) cold buttermilk
Buttermilk Egg Wash:
- 1 egg
- Splash of buttermilk

- 2-3 live lobsters or 4 lobster tails
- 1/4 cup of water
- 1/2 cup (115g) unsalted butter
- Kosher salt
- Juice of 1 small lemon
- 1/2 bunch of finely sliced chives
