- Zest 1 lemon
- ¼ cup (65g) lemon juice
Seasonal Apple Filling:
- 2 honey crisp apples, peeled and grated
- 2.5 Tbsp (35g) unsalted butter, browned
- 2 Tbsp (30 ml) rum or whiskey
- 1.25 Tbsp (12g) all-purpose flour
- ½ cup (100g) light brown sugar
- 1.5 (5g) tsp ground cinnamon
- 1 Tbsp (12g) lemon juice
- Generous pinch of kosher salt
Icing:
- 2 oz (55g) cream cheese
- ⅛ tsp almond extract *optional
- 1 cup (125g) powdered sugar
- 2 Tbsp whole milk
- 1 vanilla bean or 2 tsp (6g) vanilla extract
