Some say toast with mayo, some say butter, and some say that the classic American cheese version is the only way. I would very much like it if we could just stop arguing and actually put it to the test.

Ingredients

American Style Grilled Cheese

Prep Time: 5 minutes 

Cook Time: 10 minutes 

  • 2 slices white sandwich bread
  • Salted or unsalted butter, at room temperature  
  • 3 slices American cheese 

Sourdough Bread with Three Cheeses

Prep Time: 10 minutes

Cook Time: 10-15 minutes

  • 2 slices country sourdough bread
  • Salted or unsalted butter, at room temperature 
  • ¼ cup (28g) grated cheddar cheese
  • ¼ cup (28g) grated gouda cheese
  • ¼ cup (28g) grated raclette cheese

Caramelized Apple & Brie Grilled Cheese

Prep Time: 30 minutes

Cook Time: 35-45 minutes

  • 2 apples, peeled and diced into small, bite-sized pieces (242g)
  • 3.5 Tbsp (44g) granulated sugar
  • Pinch kosher salt
  • 2 slices brioche bread
  • Salted or unsalted butter, at room temperature 
  • Grated cheddar cheese
  • Sliced brie

Directions

American Style Grilled Cheese:

  1. Butter 2 slices of bread.
  2. Place 1 slice of bread, butter-side-down into a medium, cold pan. 
  3. Top with the American cheese.
  4. Top with the second slice of bread, butter-side-up.
  5. Toast over medium heat for 3-6 minutes until golden brown. Flip and repeat to toast on the other side. 
  6. Remove from the pan onto a cutting board. Cut in half and serve.

Sourdough Bread with Three Cheeses:

  1. Butter 2 slices of bread using about ½ tablespoon (7g) of butter per slice of bread.
  2. Combine all three cheeses together in a medium bowl. 
  3. Place 1 slice of bread, butter-side-down into a medium, cold pan. 
  4. Pile all of the grated cheese onto the slice of bread in the pan, compressing it into a cheese “patty.”
  5. Top with the second slice of bread, butter-side-up.
  6. Toast 5-8 minutes over medium heat until the cheese is just starting to melt. Flip and repeat to toast on the other side until the cheese is fully melted.
  7. Remove from the pan onto a cutting board. Cut in half and serve.

Caramelized Apple & Brie Grilled Cheese:

  1. Add the apples, sugar and a pinch of salt to a small saucepan. Toss to combine and allow the apples to sit at room temperature for 20 minutes before bringing to a boil over medium-high heat. 
  2. Reduce the heat to simmer and cook for 20-30 minutes, stirring occasionally, until caramelized.
  3. Butter 2 slices of bread.
  4. Place 1 slice of bread, butter-side-down into a medium, cold pan. 
  5. Top with a layer of the caramelized apples. 
  6. Then, top the apples with the grated cheddar, pressing down the cheese to form a “patty.” Top the cheddar with a layer of sliced brie.
  7. Top with the second slice of bread, butter-side-up.
  8. Toast over medium heat for 5-8 minutes until golden brown. Flip and repeat to toast on the other side. 
  9. Remove from the pan onto a cutting board. Cut in half and serve.
