Fudgey Brownies

  • ½ cup (73g) all-purpose flour
  • ¾ cup (80g) unsweetened cocoa powder
  • ½ tsp (3g) kosher salt 
  • 1.5 tsp (2g) instant espresso 
  • 1.25 cups (282g) granulated sugar
  • ¾ cup (170g) unsalted butter, melted, plus extra for greasing  
  • 2 large eggs, room temperature  
  • 1 Tbsp (10g) vanilla extract
  • 4 oz (113g) dark chocolate, roughly chopped
  • Flakey sea salt, to garnish

Chewy Brownies

Prep Time: 15 minutes

Cook Time: 35 minutes

  • ⅓ cup (70g) unsalted butter
  • 2 Tbsp (24g) vegetable oil 
  • ½ cup (73g) all-purpose flour 
  • ½ cup (56g) unsweetened cocoa powder 
  • ½ tsp (3g) kosher salt 
  • ¾ cup (150g) light brown sugar 
  • ¼ cup (63g) granulated sugar 
  • 2 large eggs, room temperature 
  • 1 large egg yolk, room temperature  
  • 2 tsp (6g) vanilla extract 
  • Powdered sugar, for dusting

Compost Brownies

Cook Time: 40 minutes

  • ½ cup (73g) all-purpose flour
  • ¾ cup (80g) unsweetened cocoa powder
  • ½ tsp (3g) kosher salt

  • 1 Tbsp (10g) vanilla extract
  • ½ cup (20g) crushed pretzels, plus extra for topping  
  • 1 cup (33g) crushed potato chips, plus extra for topping 
  • ⅓ cup (46g) butterscotch chips or any other flavor chip 
  • ½ cup (30g) mini marshmallows 
  • 2 oz (56g) roughly chopped dark chocolate

Directions

Fudgey Brownies

  1. Preheat the oven to 350℉ (175℃). Line an 8x8” (20x20cm) metal baking pan with parchment and grease the entire pan. Set aside. 
  2. In a medium bowl whisk together the flour, cocoa, salt and espresso powder. Set aside. 
  3. In a large bowl vigorously whisk together the sugar and melted butter until evenly combined and the sugar is most dissolved. 
  4. Whisk in the eggs, one at a time, making sure to fully incorporate the first egg before adding the second. Continue to whisk until the mixture is light in color and emulsified.
  5. Whisk in the vanilla extract until just combined. 
  6. Mix in the flour mixture until just incorporated and the batter is smooth and glossy. 
  7. Fold in the dark chocolate.
  8. Add the batter to the prepared baking pan and evenly spread it out to all the edges, ensuring the top is even and flat. 
  9. Bake for  35-40 minutes or until a toothpick inserted into the center comes out clean. 
  10. Let cool to room temp before cutting into 9 even brownies. Garnish with flakey sea salt and serve.

Chewy Brownies

  1. Preheat the oven to 350℉ (175℃). Line an 8x8” (20x20cm) metal baking pan with parchment and grease the entire pan. Set aside. 
  2. In a medium pot over medium heat add the butter and vegetable oil. Heat until the butter melts, stirring to combine the two ingredients. Remove from heat and keep warm. 
  3. In a medium bowl whisk together the flour, cocoa powder and salt until evenly combined. Set aside. 
  4. In a large bowl whisk together the brown and granulated sugar. Pour in the melted butter  and oil and whisk until evenly combined. 
  5. Whisk in the eggs and egg yolk, one at a time, making sure to fully incorporate each egg before adding the next. Continue to whisk until the mixture is light in color and emulsified.
  6. Whisk in the vanilla extract until combined. 
  7. Mix in the flour mixture until just incorporated and the batter is smooth and glossy. 
  8. Add the batter to the prepared baking pan and evenly spread it out to all the edges, ensuring the top is even and flat. 
  9. Bake for  30-35 minutes or until a toothpick inserted into the center comes out clean. 
  10. Let cool to room temp before cutting into 9 even brownies. Garnish with powdered sugar and serve.

Compost Brownies
