Ingredients

Dough:

  • 1 cup (237ml) water
  • 1 cup (237ml) whole milk
  • 5 tsp (18g) instant dry yeast
  • 2 large whole eggs, plus 1 whole egg, divided 
  • 2 large egg yolks
  • 2 Tbsp (26g) granulated sugar
  • 7 cups (750g) of unbleached bread flour, plus more for dusting
  • 3 tsp (18g) fine sea salt
  • 5 Tbsp (70g) unsalted butter, softened 

Toasted Marshmallow Hot Chocolate Sauce:

  • ½ cup (108g) granulated sugar
  • ¼ cup (42g) light brown sugar
  • ¼ tsp (2g) fine sea salt
  • ½ cup (46g) unsweetened cocoa powder
  • ½ cup (118ml) cold water
  • 4 marshmallows, toasted
  • 2 tsp (9g) vanilla extract
  • Vanilla Ice Cream, topping

Assembly:

  • 2 loaves of unsliced Brioche Bread, sliced 4” thick, either from the recipe above or store-bought
  • 3 whole eggs
  • 2 egg yolks
  • ¼ tsp (under 1g) allspice
  • 1 tsp (3g) ground cinnamon
  • ¼ tsp (under 1g) nutmeg
  • 2 Tbsp (26g) granulated sugar
  • ½ cup (118ml) heavy cream 
  • 1.5 cup (355ml) whole milk
