Ingredients

  • 1 cup (224g) salted butter, at room temperature
  • 1 cup (200g) granulated sugar, plus more for rolling
  • 1.75 cups (210g) all-purpose flour

Directions

  1. Preheat the oven to 325°F (163°C).
  2. Line two baking sheets with parchment paper and set aside. 
  3. To a large mixing bowl, add the butter. Using a hand mixer, beat on high speed until smooth. 
  4. Add the sugar and beat on high speed until the butter and sugar are creamed together. 
  5. Reduce the mixer speed to low and add the flour in three additions, mixing each addition completely before adding the next, to form a dough.
  6. Using your hands, or a cookie scoop, portion out 1.5 tablespoons of dough and roll into balls.
  7. Pour extra sugar into a shallow bowl and roll each ball of dough in the sugar to coat. Place, evenly-spaced apart, onto the prepared baking sheets and repeat with the remaining dough.
  8. Using the flat bottom of a glass or cup, gently press down on the tops of the cookies until they’re until ¼ -  ⅓” (6mm-8.5mm) thick. 
  9. Bake for 14-16 minutes. Transfer to a cooling rack to cool completely.
